"Salsa and Salsa" Doesn't that sound like it would be a fun "tour"?
It was.
The venue was the Villa Serena restaurant on the outskirts of the city. Our hostess, Alexandria, and her team were well organized and ready for us.
We sat at tables where all the ingredients were artfully arranged for making our own margaritas, three kinds of salsa, and a bowl of guacamole. There were chef hats and aprons for everyone.

Alexandria led us in salsa-making step by step.
First, mash the garlic with the molcajete (mortar and pestle). Mince the onions and mash with the garlic. Carefully cut the jalapeƱo pepper in half, discard the seeds, and decide how hot you want your salsa. (Half a pepper or more--hot. One quarter or less--mild.) Add and mash. Mince the tomatoes, add and mash. And always the same final magic ingredients: salt, lime juice, and cilantro. Mince and Mash.
While the group worked, these two fellows were in a red salsa contest. Hot vs mild--and we could all sample the difference:

We then made salsa verde (green) in the same way, substituting tomatillos for the tomatoes.

A little of our salsa verde went into the next recipe: guacamole. The thing I learned here was to squeeze the avocado out of the skin--not scoop it out.
Mash the avocado with the salsa verde, then add the final magic ingredients.
There was no shortage of margaritas!
When Alexandria taught us all--step by step--a salsa dance routine, all those margaritas put the magic oomph in our salsa!!
